Smoked Salmon Salad Avocado Boats

This is a highly nutritious quick meal for Lunch or Dinner! This smoked salmon salad is fresh, delicious, and full of a double dose of healthy fat , Omega 3’s & Omega 9 . The Carbsmart 1000 Islands Dressing , as well as the famous Carbsmart Mayo are all High in Omega 9’s which is derived from our High Oleic Oil Blend. For a more cost effective recipe , substitute the Smoked Salmon with Tuna , rather opt for the Tuna in Brine as it wont contain the Highly refined oils unlike our ‘HIGH OLEIC” oils which we use.
For a simple salad – Dice the avo , add shredded iceberg lettuce & an extra spoon of Carbsmart™ 1000 Islands Dressing or Mayonnaise.
How to cook it
- 3 tablespoons of CARBSMART™ 1000 ISLANDS SALAD DRESSING OR CARBSMART™ MAYONNAISE
- 1/2 teaspoons lemon juice
- 2-3 grinds fresh pepper
- 100 G smoked salmon, chopped
- 1 tablespoon finely chopped green onions
- 2 ripe avocados, halved, pitted, and scooped out of the peel with a big spoon
Whisk the Carbsmart 1000 islands dressing , ½ teaspoon lemon juice, and pepper together in a medium bowl.
Add smoked salmon and green onions, tossing to combine.
Taste to see if you need to add another grind of pepper.
When the smoked salmon salad is adjusted to your liking, chill it for a few hours if you’re able to, to let the flavors meld.
Lightly salt the four avocado halves and spritz them with a bit of lemon juice.
Stuff each avocado half with a quarter of the mixture, really piling it up. Serve immediately.
