Low Carb Chicken Casserole

How to bake it

Ingredients

  • 8-12 pieces chicken Pieces ( Drum & thigh)
  • 1 cup Carbsmart BBQ Sauce
  • 1 cup Carbsmart Mayo
  • 1/2 cup boiling water
  • 1 onion
  • 1 tablespoon of curry powder
  • Salt to taste
  • 1 teaspoon of butter

Instructions

  • Lightly fry the Onions in Butter until soft.
  • Blend the   the Carbsmart™ BBQ , Mayo & boiling water together.
  • Add the curry powder & onions.
  • Place the chicken in a casserole dish & pour over the CARBSMART casserole mixture.
  • Cover with foil( shiny side on the inside)
  • Cook for 40 Minutes at 180 c , then remove foil & cook for another 40 min open until  golden brown & caramelized.
  • Serve with Caulimash or  Low carb vegetables of your choice
